Giant white bean soup (Greek style)

Ingredients: for ca. 8 soup plates
  • 500 grams white giant beans
  • 1/4 knob celery
  • 1 big carrot
  • 1 leek
  • 1 clove garlic
  • 1 onion
  • 500 ml Tomato paste
  • 30 ml olive oil
  • Salt and Pepper
  • White vinegar
  • Feta Cheese
Total time: 60 minutes

Another delicious recipe from my greek aunt it's very common at peloponnesian villages. Mostly for winter month.

These giant white beans should soak in water for a few hours and you have to change the water about 3 times.

They will become more wholesome and you wouldn't have any gas problems. So after soaking you put about 2l of water in a large cooking pot and throw in your beans. Also put in your veggies and let it boil for 30 mins.

Now you reduce the heat a put in your tomato paste the olive oil and salt and pepper. Put a lid on your pot and let it simmer until beans are soft.

Then you take a spoon and try your soup, put salt and pepper to taste and you are ready to enjoy a healthy meal that warms your belly and makes you feel cosy on the inside.

Serve your soup with feta chesse and white vinegar. Enjoy...
